The purpose of this book is to provide a wide spectrum of data for use in instruction, the fundamentals of essential oils with special reference to the apiaceous herbs and as a resource material for industrialists and professionals. This book represents a truly interdisciplinary approach in describing the wonderful curative properties of the various herbaceous plants of Apiaceae. The authors have made an attempt to present before the students various aspects of essential oils, their medicinal, flavoursome and aromatic activities, in a manner quite different from the books already published. As an instructional text, “Herb and Spice Essential Oils†is designed for use even at the undergraduate level. This book contains ample information and provides pertinent knowledge about the essential oil constituents of the oil-rich and oil-poor unbellifers.
