The object of writing this book is not to compete with authors of foreign and Indian origin having experience in the same trade but to simplify and explain to the students requirements of Industry today vis-?-vis the inputs given at the Institute level. The material written together are sheer experiences faced by the authors and has independent views and research carried out to suit Indian and International requirements. The wide gap and pitfalls in the practice and precept are needed to be bridged. The aim of this book is precisely to see that the students are geared to face the Industry with alternate methods of service and make them aware of compromises needed to be carried out as and when the situation arises. This book is ideally suited for students of Hotel Management studying Degree, Diploma and associated courses in hospitality industry.
